Some weeks I need dinner to be fast more than anything else. These four are all done in 30 minutes or less, and they are four different proteins, so the week does not taste the same twice. One-Pan Tuscan Garlic Shrimp and Spinach — Twenty-five minutes, and it all happens in one pan. The shrimp cooks first and comes out, then the onion, garlic, grape tomatoes, and spinach go into that same skillet with a little coconut milk before the shrimp goes back in. Crispy Shake and Bake Pork Chops — Five minutes of prep, and the oven does the rest. You spread a thin layer of mayo on each chop, shake them in a bag of seasoned panko, and bake at 400°F for about 20 minutes. Korean Ground Beef Meal Prep Bowls — Twenty-five minutes for four bowls. The beef simmers in coconut aminos, sesame oil, garlic, and ginger, then goes over cauliflower rice with shredded carrots, green onions, and sesame seeds. It is built to portion out and reheat later in the week. Creamy Sun Dried Tomato Chicken — Thirty minutes, and it serves six. The thighs sear in a cast-iron skillet, you build the cream and sun-dried tomato sauce in that same pan, and then the whole skillet goes into the oven to finish. If you make one thing this week, make the Tuscan shrimp — it is the fastest one here and it only dirties one pan. Hope your week is a good one! Talk soon, P.S. — If the Shake and Bake Pork Chops have made it onto your table, would you leave a comment with a star rating? It takes less than two minutes, and it is what helps other readers find the recipe. Thank you! |

Football season is almost here, and this is the recipe I get asked for the most every fall. Taco Dip with Cream Cheese and Sour Cream — 15 minutes and no oven. The base is just cream cheese, sour cream, and taco seasoning, layered with lettuce, tomatoes, olives, and shredded cheese. It's the first bowl empty at every party. If you've made this dip before, would you leave a comment on the recipe with a star rating? Even one line about how you serve it helps more people find the recipe. Sara

Shepherd's Pie — Ground beef and vegetables under a smooth...
