The 4th lands on a Saturday this year, which to me is the best-case scenario — a whole afternoon to be outside, no Monday-morning scramble. My only rule for hosting on a holiday is that I'm not stuck in the kitchen while everyone else is out back, so this week's menu leans on things I can make ahead or pull together fast. Here's the easy spread I'd put out.
Roast Beef Sliders — Hawaiian rolls layered with roast beef, Swiss and cheddar, and a horseradish mayo, then baked under an everything-bagel butter crust. You can assemble them ahead and bake when people show up — they come out of the oven hot and disappear in about five minutes. This is my crowd main.
Fried Mac and Cheese Bites — Golden and crunchy on the outside, hot and melty in the middle. They're the kind of app that a kid and a grown adult will both circle back to, and they're great straight off a platter.
Animal Style Fries (In-N-Out Copycat) — Crispy fries piled with melty cheese, caramelized onions, and that creamy tangy sauce. A fun, slightly over-the-top side that feels like a treat — exactly the energy a holiday cookout calls for.
Skillet Chocolate Chip Cookie — One pan, one bowl, crispy edges and a gooey middle, done in about 35 minutes. Set it in the center of the table with a stack of forks and let everyone go at it. No slicing, no plating, barely anything to clean up.
One quick tip: Build the sliders in the morning, cover the pan, and stash it in the fridge until you're ready to bake. Holiday hosting is so much easier when the only thing standing between you and dinner is 20 minutes in the oven.
However you spend the weekend — a backyard full of people or a quiet one at home — I hope it's a good one. Happy 4th!

Sara
P.S. — if you've made the Roast Beef Sliders before, would you leave a comment with a star rating? It takes less than two minutes and it genuinely helps other readers find them. Thank you!

Cookout season is in full swing around here, and honestly my favorite kind of summer dinner is the one where the grill does most of the work and I'm not stuck inside. Lemon Garlic Salmon Skewers — Juicy salmon cubes marinated in lemon, garlic, and parsley, threaded with lemon slices and grilled until tender —...
